✨ feat(region): default china installs to `Asia/Shanghai`

- ✨ offline China first boots preselect `Asia/Shanghai` from the region profile instead of the top of the list
- 📝 profiles may name a `timezone`; first-boot setup reads it for the region in `/etc/omarchy/region`
